For the Salad
- 2 large cucumbers sliced
- 3 tablespoons olive oil
- ½ small red onion thinly sliced
- 3 medium tomatoes chopped (or 2 cups cherry tomatoes, halved)
- 2 tablespoons fresh parsley or dill chopped (optional)
For the Dressing
- 2 tablespoons red wine vinegar or apple cider vinegar
- ½ teaspoon salt
- ¼ teaspoon black pepper
- ½ teaspoon sugar optional
- ½ teaspoon garlic powder or 1 minced garlic clove
Combine cucumbers, tomatoes, red onion, and optional parsley or dill in a large bowl.
