Tomato And Avocado Grilled Cheese Sandwich is a crispy, golden sandwich filled with melted cheese, creamy avocado, and fresh tomato for a simple yet satisfying meal.

Ingredients
  

  • 1 avocado mashed
  • 1 teaspoon lemon juice
  • ½ teaspoon salt
  • 4 slices bread whole grain or sourdough
  • 4 slices Colby Jack cheese
  • 1 Roma tomato sliced
  • 1 tablespoon unsalted butter softened

Instructions
 

  • Mash avocado, mix with lemon juice and salt.
  • Butter one side of each bread slice.
  • Layer cheese, tomato, avocado, cheese, then top with bread.
  • Heat skillet over medium-low.
  • Grill 3–4 minutes until golden, then flip.
  • Cook another 3–4 minutes until crisp and cheese melts.
  • Rest briefly, then slice and serve warm.
