Crispy Pickle Cheese Bites
These crispy, golden cheese bites are bursting with the tang of dill pickles and the richness of melted cheddar and mozzarella—a quick, low-carb snack ready in under 15 minutes.
- ½ cup shredded cheddar cheese
- ½ cup shredded mozzarella cheese
- ¼ cup finely chopped dill pickles
- ½ teaspoon garlic powder
- 1 tablespoon breadcrumbs optional, for extra crisp
- Nonstick spray or parchment paper
Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper or lightly spray with nonstick coating.
In a bowl, mix cheddar, mozzarella, chopped pickles, garlic powder, and breadcrumbs for extra crunch.
Scoop teaspoon-sized mounds onto the sheet, spacing about an inch apart, and gently flatten for even crisping.
Bake 10–12 minutes until edges turn golden and bubbly.
Cool on the sheet for a few minutes, then move to a wire rack to finish crisping.
