Crispy Pickle Cheese Bites

These crispy, golden cheese bites are bursting with the tang of dill pickles and the richness of melted cheddar and mozzarella—a quick, low-carb snack ready in under 15 minutes.

Ingredients
  

  • ½ cup shredded cheddar cheese
  • ½ cup shredded mozzarella cheese
  • ¼ cup finely chopped dill pickles
  • ½ teaspoon garlic powder
  • 1 tablespoon breadcrumbs optional, for extra crisp
  • Nonstick spray or parchment paper

Instructions
 

  • Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper or lightly spray with nonstick coating.
  • In a bowl, mix cheddar, mozzarella, chopped pickles, garlic powder, and breadcrumbs for extra crunch.
  • Scoop teaspoon-sized mounds onto the sheet, spacing about an inch apart, and gently flatten for even crisping.
  • Bake 10–12 minutes until edges turn golden and bubbly.
  • Cool on the sheet for a few minutes, then move to a wire rack to finish crisping.
  • Serve warm or at room temperature for a crunchy, cheesy snack.
