Crispy Parmesan Zucchini Fries are oven-baked zucchini sticks coated with Parmesan and seasoned breadcrumbs for a crunchy, flavorful snack or side.

Ingredients
  

  • 2 medium zucchini
  • 1/2 cup all-purpose flour
  • 2 large eggs
  • 1 cup panko breadcrumbs
  • 1/2 cup grated Parmesan
  • 1 tsp garlic powder
  • 1/2 tsp Italian seasoning
  • 1/2 tsp salt
  • 1 tbsp olive oil

Instructions
 

  • Preheat the oven to 425°F (220°C), line a large baking sheet with parchment, and lightly brush the surface with olive oil so the fries brown more evenly.
  • Trim the zucchini and cut each one into thick fry-shaped sticks, trying to keep the pieces similar in size so they finish cooking at roughly the same time.
  • Place the flour in one shallow bowl, whisk the eggs in another, and combine panko, Parmesan, garlic powder, Italian seasoning, and salt in a third bowl.
  • Coat each zucchini stick lightly with flour, dip it into the beaten egg, then press it gently into the breadcrumb mixture until all sides are evenly covered.
  • Arrange the coated zucchini in a single layer on the prepared pan, leaving a small amount of space between each piece to encourage crisp edges.
  • Bake for about 12 minutes, carefully turn each fry, and continue baking for another 8–10 minutes until deeply golden and tender inside.
  • Let the fries rest for 2–3 minutes before serving with marinara sauce, ranch dressing, or a simple garlic yogurt dip.
