Crispy Cottage Cheese Breakfast Crunch Foldover

Cottage Cheese Breakfast Crunch Foldovers are crispy baked breakfast pockets made with cottage cheese, eggs, cheddar, bacon, and cooked egg filling. They bake into golden foldovers with crunchy edges and a warm cheesy center.

Ingredients
  

  • 1 cup cottage cheese
  • 2 eggs
  • ½ cup shredded cheddar
  • 1 cooked egg
  • ¼ cup cooked bacon bits
  • Pinch of salt

Instructions
 

  • Preheat the oven to 375°F and line a baking tray with parchment paper.
  • Blend the cottage cheese, eggs, and salt until smooth and creamy.
  • Spoon the mixture into thin circles on the tray and spread evenly.
  • Bake for 12 to 15 minutes until lightly golden and set.
  • Add cheddar, chopped egg, and bacon to one side of each round.
  • Fold the rounds in half and gently press the edges closed.
  • Bake again for 8 to 10 minutes until crisp and golden.
  • Cool for 5 minutes before serving.
