Creamy Sausage and Potato Bake is a comforting, cheesy casserole loaded with smoky sausage, tender potatoes, and a rich, creamy sauce. It’s an easy, one-dish meal that’s perfect for weeknights or potlucks.
- 1 lb smoked sausage or kielbasa
- 4 cups peeled and thinly sliced potatoes
- 1 small onion
- 1 can cream of mushroom or cream of chicken soup
- ¾ cup sour cream
- 1½ cups shredded cheddar cheese
- Salt and pepper
- Chopped parsley for garnish
Preheat the oven to 375°F (190°C). Grease a 9×13-inch baking dish with cooking spray or butter.
Make the creamy sauce: In a large bowl, mix the cream soup, sour cream, and half of the cheddar cheese until smooth. Season with salt and pepper.
Combine the ingredients: Add the sliced potatoes, sausage, and onion to the bowl. Stir until evenly coated in the sauce.
Assemble the casserole: Spread the mixture evenly in the greased baking dish. Sprinkle the remaining cheese on top.
Bake until golden & bubbly: Cover with foil and bake for 30 minutes. Remove the foil and bake for another 10–15 minutes until the top is golden and the potatoes are tender.
Let it sit for 5 minutes before serving. Garnish with parsley if desired.
