Creamy Lemon Blueberry Cottage Cheese Bake
A wholesome baked breakfast made with oats, cottage cheese, lemon zest, and blueberries. This lightly sweet dish offers a balance of protein, fiber, and fresh citrus flavor.
- 2 cups rolled oats
- 1 cup cottage cheese blended smooth
- 2 large eggs
- 1 cup milk dairy or almond
- Zest of 1 lemon
- 2 tablespoons fresh lemon juice
- ¼ cup maple syrup
- 1 teaspoon baking powder
- 1 cup blueberries tossed with 1 teaspoon flour
Preheat the oven to 375°F (190°C) and lightly grease a baking dish.
Whisk blended cottage cheese, eggs, milk, lemon juice, lemon zest, and maple syrup in a bowl until smooth.
Stir in rolled oats and baking powder until evenly combined.
Toss blueberries with a little flour and gently fold them into the batter.
Pour the mixture into the baking dish and spread it evenly.
Bake for 35–40 minutes until the top is lightly golden and the center is set.
Let the bake rest a few minutes before slicing and serving.
