Creamy Garlic Shrimp Over Mashed Potatoes is a comforting yet elevated dish, perfect for date nights or cozy dinners. Featuring juicy shrimp, velvety mashed potatoes, and a cheesy garlic cream sauce, it’s simple to make and packed with flavor.
Shrimp:
- 1 lb large shrimp peeled and deveined
- 2 tbsp olive oil
- 1 tsp paprika
- 1 tsp garlic powder
- Salt and pepper to taste
Sauce:
- 2 tbsp butter
- 4 cloves garlic minced
- 1 cup heavy cream
- ½ cup grated Parmesan cheese
- 1 tsp Dijon mustard optional
- Fresh thyme for garnish
Mashed Potatoes:
- 2 lbs potatoes peeled and cubed
- ½ cup warm milk
- ¼ cup butter
- Salt to taste
Peel, cube, and boil potatoes until fork-tender (about 15 minutes). Drain well.
Mash with butter and warm milk until smooth. Season with salt. Cover to keep warm.
Toss shrimp with olive oil, paprika, garlic powder, salt, and pepper. Sear in a hot skillet for 2–3 minutes per side until pink. Set aside.
In the same skillet, melt butter and sauté garlic. Add cream, Parmesan, and Dijon. Simmer 3–5 minutes until slightly thickened. Adjust seasoning.
