Creamy Cucumber Shrimp Salad
Perfect for a healthy lunch or dinner that’s ready in a snap!
- 1 lb large cooked shrimp cut into small pieces
- Old Bay Seasoning to taste
- 1 large English cucumber halved and thinly sliced
- 1 small red onion halved and thinly sliced
- 1/2 cup mayonnaise
- 1 tbsp Dijon mustard
- 1 tsp minced garlic
- Salt and pepper to taste
- 1/4 cup fresh dill chopped
Toss shrimp with Old Bay seasoning in a medium-sized bowl.
Add cucumbers and red onion, and toss to combine.
In a small bowl, mix mayonnaise, Dijon mustard, garlic, salt, pepper, and dill.
Pour the dressing over the shrimp and veggies. Stir until everything is well coated.
Refrigerate for at least an hour or overnight before serving.
