Creamy Cucumber Shrimp Salad

Perfect for a healthy lunch or dinner that’s ready in a snap!

Ingredients
  

  • 1 lb large cooked shrimp cut into small pieces
  • Old Bay Seasoning to taste
  • 1 large English cucumber halved and thinly sliced
  • 1 small red onion halved and thinly sliced
  • 1/2 cup mayonnaise
  • 1 tbsp Dijon mustard
  • 1 tsp minced garlic
  • Salt and pepper to taste
  • 1/4 cup fresh dill chopped

Instructions
 

  • Toss shrimp with Old Bay seasoning in a medium-sized bowl.
  • Add cucumbers and red onion, and toss to combine.
  • In a small bowl, mix mayonnaise, Dijon mustard, garlic, salt, pepper, and dill.
  • Pour the dressing over the shrimp and veggies. Stir until everything is well coated.
  • Refrigerate for at least an hour or overnight before serving.
