Creamy Cottage Cheese Chicken Mushroom And Spinach Casserole
A hearty baked dish combining shredded chicken, creamy cottage cheese, sautéed mushrooms, spinach, and melted mozzarella for a protein rich and comforting family dinner.
- 2 cups shredded cooked chicken
- 1 cup cottage cheese
- 8 ounces mushrooms sliced
- 2 cups baby spinach roughly chopped
- ½ cup shredded mozzarella
- 1 small onion diced
- 1 tablespoon olive oil
- Salt and pepper to taste
Preheat oven to 375°F (190°C).
Heat olive oil in a skillet over medium heat and sauté the diced onion for 3 to 4 minutes until soft.
Add sliced mushrooms and cook 5 to 7 minutes until they release moisture and start browning.
Stir in chopped spinach and cook briefly until wilted, then remove from heat.
Mix shredded chicken, cottage cheese, the mushroom mixture, and half of the mozzarella in a bowl. Season with salt and pepper.
Transfer the mixture to a baking dish, spread evenly, and sprinkle the remaining mozzarella on top.
Bake 20 to 25 minutes until bubbling and lightly golden.
Let rest about 5 minutes before serving.
