Creamy Cottage Cheese Chicken Mushroom And Spinach Casserole

A hearty baked dish combining shredded chicken, creamy cottage cheese, sautéed mushrooms, spinach, and melted mozzarella for a protein rich and comforting family dinner.

Ingredients
  

  • 2 cups shredded cooked chicken
  • 1 cup cottage cheese
  • 8 ounces mushrooms sliced
  • 2 cups baby spinach roughly chopped
  • ½ cup shredded mozzarella
  • 1 small onion diced
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions
 

  • Preheat oven to 375°F (190°C).
  • Heat olive oil in a skillet over medium heat and sauté the diced onion for 3 to 4 minutes until soft.
  • Add sliced mushrooms and cook 5 to 7 minutes until they release moisture and start browning.
  • Stir in chopped spinach and cook briefly until wilted, then remove from heat.
  • Mix shredded chicken, cottage cheese, the mushroom mixture, and half of the mozzarella in a bowl. Season with salt and pepper.
  • Transfer the mixture to a baking dish, spread evenly, and sprinkle the remaining mozzarella on top.
  • Bake 20 to 25 minutes until bubbling and lightly golden.
  • Let rest about 5 minutes before serving.
