Preheat oven to 350°F and grease an 8×8 dish.
Toss cubed chicken with garlic powder, onion powder, curry powder, salt, and pepper.
Cook chicken in olive oil 5–7 minutes until golden.
Boil broccoli 5 minutes, then drain.
Mix broccoli cheese soup, chicken soup, sour cream, milk, and lemon juice.
Stir chicken and broccoli into the sauce.
Mix in 1½ cups shredded cheddar.
Spread mixture into casserole dish.
Top with crushed Ritz crackers and remaining cheddar.
Bake 30–35 minutes until bubbly and golden.
Rest 8–10 minutes before serving.
