Creamy Chicken Broccoli Cream Casserole

Chicken Broccoli Cream Casserole is a rich baked dish made with tender chicken, bright broccoli, creamy soups, and sharp cheddar cheese. A buttery Ritz cracker topping adds the perfect golden crunch.

Ingredients
  

  • 2 pounds boneless skinless chicken breasts cubed
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ½ teaspoon curry powder
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 3 cups broccoli florets
  • 1 can condensed cream of broccoli cheese soup
  • 1 can condensed cream of chicken soup
  • 1 cup sour cream
  • ½ cup milk
  • 1 tablespoon lemon juice
  • 2 cups shredded cheddar cheese
  • 1 cup crushed Ritz crackers
  • 2 tablespoons olive oil

Instructions
 

  • Preheat oven to 350°F and grease an 8×8 dish.
  • Toss cubed chicken with garlic powder, onion powder, curry powder, salt, and pepper.
  • Cook chicken in olive oil 5–7 minutes until golden.
  • Boil broccoli 5 minutes, then drain.
  • Mix broccoli cheese soup, chicken soup, sour cream, milk, and lemon juice.
  • Stir chicken and broccoli into the sauce.
  • Mix in 1½ cups shredded cheddar.
  • Spread mixture into casserole dish.
  • Top with crushed Ritz crackers and remaining cheddar.
  • Bake 30–35 minutes until bubbly and golden.
  • Rest 8–10 minutes before serving.
