Creamy Chicken À La King
Tender chicken, creamy sauce, and plenty of veggies, this is a hearty dish perfect for serving over rice, pasta, or biscuits!
- 1/2 cup salted butter
- 8 ounces sliced mushrooms button or crimini
- 1/2 cup all-purpose flour
- 2 cups chicken broth
- 1 1/2 cups milk
- 2 egg yolks
- 1/3 cup heavy cream
- 1 cup frozen peas
- 1 cup pimientos drained, chopped
- 4 cups cooked chicken chopped
In a large saucepan, melt butter over medium-high heat. Add mushrooms and cook until soft (about 5 minutes).
Add flour and stir until the flour is fully absorbed.
Pour in chicken broth and milk. Bring the mixture to a boil, then reduce the heat and simmer for about 3 minutes, stirring until thickened.
For a richer sauce:
Whisk egg yolks and heavy cream in a small bowl.Slowly add 1/2 cup of the hot mixture to the egg mixture while whisking, then pour this back into the saucepan, stirring constantly.Cook for 2 more minutes. Stir in frozen peas, pimientos, and chicken. Cook until heated through, about 2-3 minutes.
Serve hot over rice, pasta, toast, or biscuits, and enjoy!
