Creamy Chicken À La King

Tender chicken, creamy sauce, and plenty of veggies, this is a hearty dish perfect for serving over rice, pasta, or biscuits!

Ingredients
  

  • 1/2 cup salted butter
  • 8 ounces sliced mushrooms button or crimini
  • 1/2 cup all-purpose flour
  • 2 cups chicken broth
  • 1 1/2 cups milk
  • 2 egg yolks
  • 1/3 cup heavy cream
  • 1 cup frozen peas
  • 1 cup pimientos drained, chopped
  • 4 cups cooked chicken chopped

Instructions
 

  • In a large saucepan, melt butter over medium-high heat. Add mushrooms and cook until soft (about 5 minutes).
  • Add flour and stir until the flour is fully absorbed.
  • Pour in chicken broth and milk. Bring the mixture to a boil, then reduce the heat and simmer for about 3 minutes, stirring until thickened.

For a richer sauce:

  • Whisk egg yolks and heavy cream in a small bowl.
    Slowly add 1/2 cup of the hot mixture to the egg mixture while whisking, then pour this back into the saucepan, stirring constantly.
    Cook for 2 more minutes.
  • Stir in frozen peas, pimientos, and chicken. Cook until heated through, about 2-3 minutes.
  • Serve hot over rice, pasta, toast, or biscuits, and enjoy!
