Creamy Butterscotch Pie
Butterscotch Pie is a smooth, creamy dessert made with a rich brown sugar custard filling, baked in a flaky crust for a simple and comforting treat.
- 1 cup packed light brown sugar
- 4 tablespoons cornstarch
- ½ teaspoon salt
- 2 cups milk
- 2 egg yolks beaten
- 1 tablespoon butter
- 1 teaspoon vanilla extract
- 1 9- inch pie crust baked
Cook sugar, cornstarch, salt, milk over heat, stir until thickened.
Whisk in egg yolks, cook until smooth and custard-like.
Remove heat, stir in butter and vanilla until glossy.
Preheat oven to 400°F.
Pour filling into baked pie crust, spread evenly.
Bake 5 minutes until lightly browned.
Cool, then chill 1–2 hours before serving.
