Creamy Amish Pineapple Cake
Amish Pineapple Cake is a soft, sweet cake made with crushed pineapple and yellow cake mix, finished with creamy vanilla cream cheese frosting and optional crunchy nuts.
- 1 box yellow cake mix
- 1 can crushed pineapple 20 ounces undrained
- 3 large eggs
- ⅓ cup vegetable oil
- 8 ounces cream cheese softened
- 2 cups powdered sugar
- 1 teaspoon vanilla extract
- ½ cup chopped pecans or walnuts optional
Preheat oven to 350°F (175°C) and lightly grease a 9×13 inch baking pan.
Mix yellow cake mix, crushed pineapple with juice, eggs, and vegetable oil in a large bowl until smooth.
Pour the batter into the pan and spread evenly with a spatula.
Bake 30 to 35 minutes until lightly golden and a toothpick inserted in the center comes out clean.
Beat softened cream cheese until smooth, then mix in powdered sugar and vanilla until creamy.
Let the cake cool completely, then spread the cream cheese frosting evenly on top.
Sprinkle chopped pecans or walnuts over the frosting if desired.
