Creamy Amish Pineapple Cake

Amish Pineapple Cake is a soft, sweet cake made with crushed pineapple and yellow cake mix, finished with creamy vanilla cream cheese frosting and optional crunchy nuts.

Ingredients
  

  • 1 box yellow cake mix
  • 1 can crushed pineapple 20 ounces undrained
  • 3 large eggs
  • cup vegetable oil
  • 8 ounces cream cheese softened
  • 2 cups powdered sugar
  • 1 teaspoon vanilla extract
  • ½ cup chopped pecans or walnuts optional

Instructions
 

  • Preheat oven to 350°F (175°C) and lightly grease a 9×13 inch baking pan.
  • Mix yellow cake mix, crushed pineapple with juice, eggs, and vegetable oil in a large bowl until smooth.
  • Pour the batter into the pan and spread evenly with a spatula.
  • Bake 30 to 35 minutes until lightly golden and a toothpick inserted in the center comes out clean.
  • Beat softened cream cheese until smooth, then mix in powdered sugar and vanilla until creamy.
  • Let the cake cool completely, then spread the cream cheese frosting evenly on top.
  • Sprinkle chopped pecans or walnuts over the frosting if desired.
