Cozy Cinnamon Cake

Cinnamon Cake is a soft, tender cake layered with a cinnamon brown sugar swirl and finished with a light vanilla glaze, perfect for casual desserts or morning slices with coffee.

Ingredients
  

  • 2 cups all purpose flour
  • cups granulated sugar
  • 1 tablespoon ground cinnamon
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 2 large eggs
  • 1 cup buttermilk
  • ½ cup vegetable oil
  • 1 teaspoon vanilla extract

For the Cinnamon Swirl

  • cup brown sugar
  • 1 tablespoon ground cinnamon

For the Glaze

  • 1 cup powdered sugar
  • 2 to 3 tablespoons milk
  • ½ teaspoon vanilla extract

Instructions
 

  • Preheat oven to 350°F or 175°C and grease a 9x13 inch baking pan thoroughly.
  • Whisk flour, granulated sugar, cinnamon, baking powder, baking soda, and salt until evenly combined.
  • Add eggs, buttermilk, oil, and vanilla, whisking until the batter is smooth.
  • Pour half of the batter into the prepared pan and spread evenly.
  • Mix brown sugar and cinnamon, then sprinkle evenly over the batter.
  • Pour remaining batter on top and gently swirl with a knife.
  • Bake for 35–40 minutes until lightly golden and a toothpick comes out clean.
  • Whisk glaze ingredients, drizzle over warm cake, then slice and serve.
