Cottage Cheese Pepperoni Pizza Foldover Pockets are a lighter, protein rich twist on pizza, featuring a soft cheesy base filled with sauce, turkey pepperoni, and melty mozzarella, baked until golden and satisfying.
- 1 cup cottage cheese
- 1 cup shredded mozzarella cheese
- 2 large eggs
- ½ cup almond flour
- 1 teaspoon Italian seasoning
- ½ teaspoon garlic powder
- ¼ teaspoon salt
- ½ cup turkey pepperoni slices
- ⅓ cup pizza sauce
- 1 tablespoon grated Parmesan cheese
- Optional chopped bell peppers or spinach
Preheat oven to 400°F and line a baking sheet with parchment paper.
Mix cottage cheese, eggs, mozzarella, almond flour, and seasonings until smooth.
Scoop into 4 portions on the sheet and spread into ½ inch thick ovals.
Bake 12 to 15 minutes until lightly golden, then cool for 2 minutes.
Add pizza sauce, pepperoni, and optional vegetables to one side.
Fold over into pockets and press edges lightly to seal.
Sprinkle Parmesan and bake another 8 to 10 minutes until golden and melty.
Cool slightly before serving so pockets hold together.
