Cottage Cheese Cinnamon Roll Mug Cake
A fluffy, single-serve mug cake made in minutes—cottage cheese and almond flour combine with cinnamon for a light, wholesome twist on a cinnamon roll, topped with creamy yogurt.
- ¼ cup cottage cheese
- 1 large egg
- 2 tbsp almond flour or oat flour
- 1 tbsp maple syrup or honey
- ½ tsp vanilla extract
- ½ tsp ground cinnamon
- ¼ tsp baking powder
- Pinch of salt
Cinnamon Swirl (optional):
- 1 tsp maple syrup
- ¼ tsp cinnamon
Optional Topping:
- 1 tbsp Greek yogurt or cream cheese mixed with a bit of sweetener
Mix cottage cheese, egg, almond flour, maple syrup, vanilla, cinnamon, baking powder, and salt until smooth.
Mix cinnamon with a bit of maple syrup and swirl it on top of the batter.
Microwave for 1 to 1½ minutes until the middle is just set.
Let it sit for 1–2 minutes. Add Greek yogurt or cream cheese on top if you like.
