Cottage Cheese Cheddar Jalapeño Loaf Slices
A savory, protein rich baked loaf with creamy cottage cheese, sharp cheddar, and a mild jalapeño kick, baked until golden and sliceable.
- 1 cup cottage cheese blended smooth
- 1 cup all purpose flour
- 2 teaspoons baking powder
- ¼ teaspoon salt
- ¼ to ½ cup shredded cheddar cheese plus extra for topping
- 1 to 2 jalapeños finely diced
- Optional 1 egg for egg wash
Preheat oven to 375°F and line a loaf pan or baking sheet with parchment paper.
Whisk flour, baking powder, and salt in a bowl until evenly combined.
Blend cottage cheese smooth, then mix into dry ingredients to form a soft dough, adding flour if too sticky.
Fold in cheddar cheese and diced jalapeños until evenly distributed.
Press dough into a loaf pan or shape into logs, smoothing the surface.
Brush with egg wash if desired and sprinkle extra cheese and jalapeños on top.
Bake 22 to 25 minutes until golden brown, crisp outside and soft inside.
Let cool for 10 minutes before slicing so it holds together.
