Cottage Cheese Broccoli Cheddar Pop Bites
A light, protein rich baked bite combining cottage cheese, broccoli, and cheddar, crisp on the outside and soft inside.
- 1 cup cottage cheese
- 2 eggs
- 1 cup finely chopped broccoli
- ½ cup shredded cheddar cheese
- ¼ cup grated Parmesan
- Pinch of salt
Preheat oven to 375°F and line a baking sheet or grease a mini muffin pan for easy release.
Whisk cottage cheese and eggs in a bowl until smooth and well combined.
Stir in chopped broccoli, cheddar, Parmesan, and salt until evenly mixed into a slightly thick batter.
Spoon mixture into small portions on the tray or muffin cups, filling about three quarters full.
Bake for 18 to 22 minutes until tops are golden and edges lightly crisp while centers stay soft.
Let cool for 5 to 10 minutes so bites firm up and release easily before serving.
