Cool Whip Pineapple Fluff
Cool Whip Pineapple Fluff is a creamy, sweet, and tangy chilled dessert made with whipped topping, crushed pineapple, pudding mix, and marshmallows. It’s quick to prepare, easy to customize, and perfect for potlucks, family gatherings, or a refreshing summer treat.
- 1 20-ounce can crushed pineapple, drained well (reserve 2 tablespoons of juice)
- 1 8-ounce tub Cool Whip, thawed
- 1 3.4-ounce package instant vanilla pudding mix
- 1 cup mini marshmallows
- ½ cup shredded sweetened coconut optional
- ½ cup chopped pecans or walnuts optional
- 1 cup cottage cheese or 8 ounces cream cheese softened
- ½ teaspoon vanilla extract
- A pinch of salt
- Optional Garnishes: whipped cream dollops maraschino cherries, toasted coconut flakes, or crushed graham crackers.
Drain the crushed pineapple well, saving about 2 tablespoons of juice. Beat the cream cheese until smooth and fluffy, or blend cottage cheese to remove lumps.
Mix the cream cheese or cottage cheese with the vanilla pudding mix and reserved pineapple juice until creamy. Let it sit for a minute to thicken slightly.
Fold in the crushed pineapple until evenly combined, then gently fold in the Cool Whip to keep it light and airy. Stir in mini marshmallows, shredded coconut, and chopped pecans if desired for added texture and sweetness.
Spoon the mixture into a large bowl or dessert cups, cover, and refrigerate for at least 2 hours or overnight so the flavors meld and the dessert becomes perfectly scoopable.
