Coca-Cola Meatballs

These Coca-Cola Meatballs are juicy, tangy, and rich—perfect over any carb dish

Ingredients
  

Meatballs:

  • 1 ½ pounds ground beef 80/20 blend
  • 1/2 cup breadcrumbs
  • 1/4 cup milk
  • 1 large egg
  • 1/4 cup onion finely chopped
  • 2 cloves garlic minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon dried oregano
  • 1 tablespoon Worcestershire sauce
  • 2 tablespoons olive oil for browning

Coca-Cola sauce:

  • 1 ½ cups Coca-Cola regular
  • 1 cup ketchup
  • 1/4 cup brown sugar
  • 1 tablespoon soy sauce
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon black pepper

Instructions
 

  • Preheat oven to 350°F (175°C) and line a baking sheet.
  • Mix ground beef, breadcrumbs, milk, egg, onion, garlic, and seasonings in a large bowl.
  • Form mixture into 1- to 1.5-inch meatballs. Brown in olive oil in a skillet.
  • Whisk Coca-Cola, ketchup, brown sugar, soy sauce, vinegar, and spices in a saucepan. Simmer until thickened.
  • Place meatballs on the baking sheet, pour sauce over them, and bake for 20-25 minutes.
  • Serve meatballs hot with extra sauce, over your favorite side dish, and enjoy!
