Coca-Cola Fudge Layer Cake

Coca-Cola Fudge Layer Cake a rich, moist chocolate layer cake made with Coca-Cola and topped with warm fudge frosting that pours beautifully over the layers.

Ingredients
  

For the Coca-Cola Cake Layers

  • 2 cups granulated sugar
  • 2 cups all purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon fine salt
  • ½ teaspoon instant espresso powder optional
  • 1 cup unsalted butter
  • 1 cup Coca-Cola not diet
  • 1 cup unsweetened cocoa powder
  • ½ cup buttermilk room temperature
  • 2 large eggs room temperature
  • 1 teaspoon vanilla extract

For the Fudge Coca-Cola Frosting

  • 1 cup unsalted butter
  • ½ cup Coca-Cola
  • ½ cup unsweetened cocoa powder
  • 4 cups powdered sugar sifted
  • 1 teaspoon vanilla extract
  • Pinch of salt
  • Optional ½ cup chopped pecans for garnish

Instructions
 

  • Preheat the oven to 350°F and prep two greased, floured, parchment-lined 8-inch pans.
  • Whisk flour, sugar, baking soda, salt, and espresso powder.
  • Melt butter with Coca-Cola and cocoa, stir smooth, and pour into the dry mixture.
  • Whisk in buttermilk, eggs, and vanilla until smooth.
  • Divide batter into pans, bake 28–32 minutes, cool in pans 10 minutes, then on racks.
  • Heat butter, Coca-Cola, and cocoa to a gentle boil, remove from heat, add salt, vanilla, and powdered sugar until glossy.
  • Frost the first layer, add the second, pour remaining warm frosting, and let set 30 minutes.
