Cinnamon French Toast Muffins

Crispy on the outside, fluffy on the inside, and coated in a sweet cinnamon sugar blend, these muffins are simply irresistible.

Ingredients
  

  • 2 cups all-purpose flour
  • 1 cup sugar
  • 2 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup butter melted
  • 1 cup milk
  • 2 large eggs
  • 1 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/4 tsp vanilla extract

Optional toppings:

  • Whipped cream,powdered sugar, fresh berries, maple syrup, chopped nuts

Instructions
 

  • Preheat oven to 375°F (190°C) and line a 12-cup muffin tin with paper liners.
  • In a bowl, whisk flour, sugar, baking powder, salt, and cinnamon.
  • In another bowl, whisk melted butter, milk, eggs, nutmeg, and vanilla.
  • Combine wet and dry ingredients, stirring until just mixed.
  • Divide batter evenly into the muffin cups and bake for 20-25 min, or until a toothpick comes out clean.
  • Dip warm muffin tops in cinnamon sugar mixture; bake 2-3 min for a crispier finish.
