- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1 tsp cinnamon
- 1/2 cup unsalted butter, softened
- 3/4 cup sugar
- 2 eggs
- 1 tsp vanilla
- 1/2 cup sour cream
- 2 apples, peeled and diced
For the crumb:
- 1/2 cup flour
- 1/3 cup brown sugar
- 1 tsp cinnamon
- 4 tbsp cold butter
Preheat the oven to 350°F (175°C) and grease an 8-inch square pan.
Combine the crumb ingredients until coarse pieces form; refrigerate.
Whisk the flour, baking powder, baking soda, salt, and cinnamon.
Beat the softened butter and sugar until creamy, then mix in the eggs and vanilla.
Alternate adding the flour mixture and sour cream until a thick batter forms.
Fold in the diced apples and spread the batter into the pan.
Scatter the chilled crumb mixture evenly across the top.
Bake for 40–45 minutes and cool before slicing.
