Cinnamon Apple Cottage Cheese Bites

Cinnamon Apple Cottage Cheese Bites are soft, lightly sweetened, and packed with protein. Made with cottage cheese, oat flour, and warm spices, they’re a nutritious, bite-sized snack perfect for breakfast or an on-the-go treat.

Ingredients
  

  • 1 small apple
  • ½ cup cottage cheese
  • 1 egg
  • ¼ cup flour
  • 1 tbsp honey or maple syrup
  • ½ tsp cinnamon
  • ¼ tsp nutmeg
  • ½ tsp baking powder
  • 1 tsp vanilla extract
  • salt

Instructions
 

  • Prepare the Batter: Preheat the oven to 350°F (175°C) and grease a mini muffin tin. In a bowl, whisk the egg, cottage cheese, vanilla, and honey (or maple syrup) until smooth. Stir in oat flour, baking powder, cinnamon, nutmeg, and salt. Fold in the diced apple.
  • Bake the Bites: Fill each muffin cup ¾ full with batter. Bake for 15-18 minutes until golden brown and a toothpick comes out clean. Let them cool in the pan for 5 minutes before transferring to a wire rack.
  • Serve: Enjoy warm for a soft texture or let them cool for a firmer bite. Serve plain or with a drizzle of honey or nut butter.
