Churro Stuffed French Toast With Cinnamon Sugar

Churro Stuffed French Toast blends the custardy goodness of French toast with the sweet, spicy flavor of churros. Stuffed with cream cheese and coated in cinnamon sugar, it's the ultimate breakfast treat for any occasion!

Ingredients
  

  • 4 slices thick-cut Brioche bread
  • 4 large eggs
  • 1 cup whole milk
  • 1 tsp vanilla extract
  • 1 tsp ground cinnamon
  • Pinch of salt
  • 1 cup softened cream cheese
  • ½ cup powdered sugar
  • ½ cup granulated sugar
  • 2 tbsp ground cinnamon
  • 2 tbsp butter

Instructions
 

  • Whisk together 4 eggs, 1 cup of milk, vanilla extract, cinnamon, and a pinch of salt until well combined.
  • Mix 1 cup of softened cream cheese with ½ cup of powdered sugar until smooth and creamy.
  • Spread the cream cheese mixture on 2 slices of brioche bread. Top with the remaining slices to form sandwiches, pressing gently to seal.
  • Heat 1 tablespoon of butter in a skillet over medium heat. Dip the sandwiches into the egg mixture, coating both sides. Cook for 3-4 minutes on each side until golden brown.
  • Mix ½ cup of sugar and 2 tablespoons of cinnamon in a shallow dish. Coat each sandwich in the cinnamon sugar once cooked.
  • Serve warm with a drizzle of maple syrup for extra sweetness.
