Chocolate Covered Strawberry Pie

Chocolate Covered Strawberry Pie is a chilled dessert made with a chocolate cookie crust, a light cream cheese filling, fresh strawberries, and a smooth chocolate ganache topping.

Ingredients
  

  • 1 prepared chocolate cookie pie crust
  • 1 ½ cups heavy whipping cream
  • 8 ounces cream cheese softened
  • ½ cup powdered sugar
  • 1 teaspoon vanilla extract
  • 2 cups fresh strawberries hulled and halved
  • 1 cup semi sweet chocolate chips
  • ½ cup heavy cream for ganache

Instructions
 

  • Beat the softened cream cheese until completely smooth and lump free.
  • Add powdered sugar and vanilla extract, mixing until silky and well combined.
  • Whip the heavy cream in a separate bowl until stiff peaks form.
  • Gently fold the whipped cream into the cream cheese mixture until light and fluffy.
  • Spread the filling evenly into the prepared chocolate cookie pie crust and smooth the top.
  • Arrange the halved strawberries over the filling, pressing them in gently.
  • Heat the heavy cream until just simmering, pour over the chocolate chips, let sit briefly, then stir until smooth.
  • Pour the ganache over the strawberries and refrigerate for at least 3 hours until fully set.
