Chocolate Covered Strawberry Pie
Chocolate Covered Strawberry Pie is a chilled dessert made with a chocolate cookie crust, a light cream cheese filling, fresh strawberries, and a smooth chocolate ganache topping.
- 1 prepared chocolate cookie pie crust
- 1 ½ cups heavy whipping cream
- 8 ounces cream cheese softened
- ½ cup powdered sugar
- 1 teaspoon vanilla extract
- 2 cups fresh strawberries hulled and halved
- 1 cup semi sweet chocolate chips
- ½ cup heavy cream for ganache
Beat the softened cream cheese until completely smooth and lump free.
Add powdered sugar and vanilla extract, mixing until silky and well combined.
Whip the heavy cream in a separate bowl until stiff peaks form.
Gently fold the whipped cream into the cream cheese mixture until light and fluffy.
Spread the filling evenly into the prepared chocolate cookie pie crust and smooth the top.
Arrange the halved strawberries over the filling, pressing them in gently.
Heat the heavy cream until just simmering, pour over the chocolate chips, let sit briefly, then stir until smooth.
Pour the ganache over the strawberries and refrigerate for at least 3 hours until fully set.
