Cheesy Zucchini Rice Casserole is a creamy baked dish made with zucchini, rice, eggs, cheddar, and Parmesan.

- 2 medium zucchini, grated
- 1 tbsp olive oil
- 2 eggs
- 1/2 cup milk
- 1/3 cups shredded cheddar
- 1/3 cup grated Parmesan
- 1 tsp garlic powder
- Salt and pepper
Preheat the oven to 375°F (190°C), grease an 8-inch baking dish, and lightly squeeze the grated zucchini to remove obvious excess water.
Heat the olive oil in a skillet, add the zucchini, and cook for 4–5 minutes until softened and slightly reduced in volume.
Place the cooked rice in a large mixing bowl and add the sautéed zucchini, garlic powder, salt, pepper, and about one cup of cheddar.
Whisk the eggs and milk in a separate bowl, then pour the mixture over the rice and stir until everything is evenly coated.
Transfer the mixture to the prepared baking dish and press it gently into an even layer without compacting it too firmly.
Sprinkle the remaining cheddar and Parmesan over the top and bake for 25–30 minutes until bubbling and golden around the edges.
Let the casserole rest for about 5 minutes before spooning it onto plates so the creamy center has time to settle.
