Set oven to 425°F (218°C). Line a large baking sheet or spray with non-stick spray.
Brown ground beef in a skillet over medium heat, breaking it up as it cooks. Drain grease.
Stir in taco seasoning over low heat. Cook 1–2 minutes, then remove from heat to cool slightly.
Unroll pizza dough and press into a rectangle. Cut in half lengthwise, then into 10 rectangles.
Add 1 tbsp taco meat and half a cheese stick to each rectangle. Roll up and pinch seams to seal.
Mix melted butter, garlic powder, and parsley. Brush over each rolled stick.
Place on baking sheet, spaced apart. Bake 10–12 minutes, until golden and bubbly.
Cool slightly. Serve plain or with sour cream, salsa, or guac on the side.
