Spicy Patty Melts On Texas Toast are stacked sandwiches featuring juicy ground chuck patties, caramelized onions, charred jalapeños, smoky chipotle burger spread, crispy bacon, and melted three pepper Colby jack cheese layered between golden grilled Texas toast.

Ingredients
  

For the Patty Melts

  • 1 pound ground chuck 80 percent lean
  • 2 large white onions diced
  • 2 jalapeños sliced into thin rings
  • 1 tablespoon favorite beef rub
  • 4 slices three pepper Colby jack cheese
  • 4 slices Texas toast buns
  • 4 slices bacon
  • 2 tablespoons neutral oil
  • 2 tablespoons unsalted butter
  • 1 teaspoon kosher salt

For the Spicy Burger Spread

  • ½ cup mayonnaise
  • 2 tablespoons ketchup
  • 1 tablespoon yellow mustard
  • 2 tablespoons sweet relish
  • 1 chipotle pepper in adobo finely chopped
  • 1 teaspoon adobo sauce
  • 1 teaspoon white wine vinegar
  • ¼ teaspoon kosher salt

Instructions
 

  • Caramelize diced onions with oil, butter, and salt for about 45 minutes.
  • Sauté jalapeño rings until lightly charred.
  • Whisk all sauce ingredients and chill 15 minutes.
  • Form 4 burger patties, season, chill 15 to 20 minutes.
  • Cook bacon until crisp.
  • Grill patties, flip, melt Colby jack cheese on top.
  • Spread sauce on Texas toast and toast until golden.
  • Layer toast, sauce, jalapeños, patties, onions, bacon, then serve.
