Cheesy Shrimp Quesadilla
Cheesy Shrimp Quesadilla is filled with juicy seasoned shrimp, sautéed vegetables, and melty Monterey style cheese inside crispy buttered tortillas, finished with bright lime and fresh toppings for a light yet satisfying family meal.
For the Shrimp Filling
- 1 tablespoon neutral flavored oil such as avocado or canola
- 1 medium yellow onion diced
- 1 large bell pepper diced
- 2 tablespoons taco seasoning
- 1 pound raw medium shrimp peeled and deveined
- 1 tablespoon fresh lime juice
For the Quesadillas
- 2 tablespoons butter divided
- 4 large flour tortillas
- 2 cups freshly shredded Monterey Jack or Mexican blend cheese
Optional Toppings
- ¼ cup chopped fresh cilantro
- ½ cup sour cream
- ½ cup pico de gallo
Sauté onion and bell pepper in oil 6 minutes until soft.
Add taco seasoning, stir 1 minute.
Cook shrimp 3 to 5 minutes until opaque.
Remove from heat, add lime juice.
Butter skillet, place tortilla.
Add ½ cup filling and ½ cup cheese, cook 90 seconds.
Fold, flip, cook 1 to 2 minutes until golden.
Repeat, slice, serve warm with toppings.
