Cheesy Sausage Hashbrown Bake

A deliciously cheesy and savory breakfast casserole made with crispy hashbrowns, sausage, eggs, and melted cheese. This easy-to-make dish is perfect for brunch, meal prep, or a family breakfast.

Ingredients
  

  • 1 lb sausage
  • 30 oz frozen hashbrowns
  • 8 oz cream cheese
  • 6 eggs
  • ½ cup milk
  • 1 cup shredded cheddar cheese
  • Salt and pepper

Instructions
 

  • Cook the sausage: In a skillet over medium heat, cook the sausage until browned, breaking it up as it cooks. Drain excess grease and let it cool slightly.
  • Mix the ingredients: In a large bowl, whisk together eggs, milk, salt, and pepper. Stir in softened cream cheese until smooth. Add cooked sausage, hashbrowns, and half of the cheddar cheese, then mix well.
  • Assemble and bake: Preheat the oven to 350°F (175°C). Grease a 9x13-inch baking dish and pour in the mixture. Sprinkle the remaining cheddar on top. Bake for 35-40 minutes until golden brown and set in the center.
  • Serve: Let the casserole rest for 5-10 minutes before slicing. Serve warm with green onions, salsa, or sour cream.
