Cheesy Sausage Hashbrown Bake
A deliciously cheesy and savory breakfast casserole made with crispy hashbrowns, sausage, eggs, and melted cheese. This easy-to-make dish is perfect for brunch, meal prep, or a family breakfast.
- 1 lb sausage
- 30 oz frozen hashbrowns
- 8 oz cream cheese
- 6 eggs
- ½ cup milk
- 1 cup shredded cheddar cheese
- Salt and pepper
Cook the sausage: In a skillet over medium heat, cook the sausage until browned, breaking it up as it cooks. Drain excess grease and let it cool slightly.
Mix the ingredients: In a large bowl, whisk together eggs, milk, salt, and pepper. Stir in softened cream cheese until smooth. Add cooked sausage, hashbrowns, and half of the cheddar cheese, then mix well.
Assemble and bake: Preheat the oven to 350°F (175°C). Grease a 9x13-inch baking dish and pour in the mixture. Sprinkle the remaining cheddar on top. Bake for 35-40 minutes until golden brown and set in the center.
Serve: Let the casserole rest for 5-10 minutes before slicing. Serve warm with green onions, salsa, or sour cream.
