Cheesy Pepperoni Pizza Roll-Ups With Low-Carb Tortillas
Crispy on the outside, cheesy and melty inside—these low-carb pepperoni pizza roll-ups are a quick, crowd-pleasing twist on classic pizza, perfect for weeknight snacks or party bites.
- 4 low-carb tortillas
- 1 cup shredded mozzarella cheese
- 16 slices of pepperoni
- ½ cup pizza sauce
- ½ teaspoon Italian seasoning
- Olive oil spray optional
Set your oven to 375°F (190°C) and line a baking sheet with parchment paper.
Lay out the tortillas and spread 2 tablespoons of pizza sauce on each, leaving a small border.
Sprinkle ¼ cup of mozzarella on each tortilla, then layer 4 pepperoni slices. Add a pinch of Italian seasoning.
Roll each tortilla tightly and place seam-side down on the baking sheet.
Lightly spray the tops with olive oil for a golden, crispy finish.
Bake for 10–12 minutes, until the cheese melts and the edges are slightly crisp.
Let cool briefly, then slice into 3–4 pieces. Serve with warm pizza sauce for dipping.
