Cheesy Patty Melts With Special Sauce

A nostalgic twist on a diner classic—juicy beef patties and melted cheese sandwiched between buttery rye bread, topped with a tangy, bacon-studded special sauce.

Ingredients
  

For the patties and sandwich

  • 1 pound ground beef
  • 6 slices rye bread
  • ½ teaspoon onion powder
  • ½ teaspoon garlic powder
  • Salt and pepper to taste
  • 6 slices cheddar cheese
  • 6 slices provolone cheese
  • 6 tablespoons softened unsalted butter

For the special sauce

  • ¼ cup mayonnaise
  • 2 tablespoons chopped bacon pieces
  • 3 tablespoons ketchup
  • 1 teaspoon sugar
  • 1 teaspoon relish

Instructions
 

  • Shape ground beef into 3 patties to match bread size. Season with onion powder, garlic powder, salt, and pepper.
  • Sear patties in a skillet over medium-high heat for 4–5 minutes per side until fully cooked. Set aside.
  • Mix mayo, bacon, ketchup, sugar, and relish in a small bowl until smooth.
  • Butter one side of each bread slice. In a clean skillet, place 3 slices buttered-side down. Layer with provolone, patty, cheddar, and top slice with sauce facing in.
  • Cook each sandwich over medium heat until golden and cheese melts, about 2–3 minutes per side.
  • Slice and serve hot while the cheese is still gooey.
