Cheesy Garlic Bread Bites

Ingredients
  

For the dough:

  • 350 g bread flour
  • 15 g sugar
  • 15 g milk powder optional
  • 7 g instant dry yeast
  • 7 g salt
  • 200 g whole milk room temp
  • 1 large egg
  • 60 g unsalted butter softened and cut into cubes
  • 1 egg for egg wash

For the filling:

  • 200 g shredded mozzarella or block mozzarella/string cheese, cut into cubes

For the garlic butter:

  • 60 g butter
  • 2 large cloves garlic minced
  • 1-2 tbsp fresh parsley chopped
  • Pinch of salt

Instructions
 

  • Combine the flour, sugar, milk powder, yeast, salt, milk, and egg in the bowl of your stand mixer.
  • Knead on low speed for 10 minutes. Gradually add the butter one cube at a time.
  • Continue kneading for an additional 10-20 minutes until the dough passes the window-pane test.
  • Proof for 60-90 minutes until doubled in size.
  • Divide the dough into 20 equal pieces.
  • Flatten each ball and place a cube of cheese in the center. Wrap the dough around the cheese and seal.
  • Arrange the dough balls seam-side down in a 12-inch (30 cm) baking pan. Cover and proof for 30 minutes.
  • Preheat the oven to 350°F (180°C).
  • Brush the bread bites with egg wash. Bake for 15-20 minutes until golden brown.
  • Melt the butter with minced garlic in a pot.
  • Simmer for 1 minute, add parsley and salt to taste, and remove from heat.
  • Brush the garlic butter over the bread bites immediately after they come out of the oven. Enjoy while warm!
