Cheesy Beefy Burritos are hearty, flavor-packed tortilla rolls filled with seasoned beef, rice, and a blend of melted cheddar and mozzarella, topped with salsa and baked until bubbly—perfect for busy weeknights or family-style dinners.

Ingredients
  

For the Filling

  • 1 lb ground beef
  • ½ cup chopped onion
  • 2 cloves garlic minced
  • 1 packet 1 oz taco seasoning
  • ½ cup water
  • 1 cup cooked rice
  • 1 cup shredded cheddar cheese
  • 1 cup shredded mozzarella cheese

For Assembly

  • 4 large flour tortillas
  • 1 cup salsa mild or spicy based on preference
  • Optional: extra cheese for topping

For Serving

  • ½ cup sour cream
  • ¼ cup chopped fresh cilantro optional

Instructions
 

  • Cook the Beef: Brown the ground beef in a skillet, then drain the fat.
  • Add Flavor: Sauté chopped onion and minced garlic until soft and fragrant.
  • Season the Mixture: Stir in taco seasoning and water; simmer until thickened.
  • Assemble the Burritos: Layer tortillas with rice, beef mixture, and cheeses.
  • Roll and Arrange: Roll them up tightly and place seam-side down in a baking dish.
  • Top and Bake: Pour salsa over the top, add extra cheese if desired, and bake at 375°F (190°C) for 20 minutes.
  • Garnish and Serve: Top with fresh cilantro and serve with sour cream on the side.
