Cheesy Beefy Burritos are hearty, flavor-packed tortilla rolls filled with seasoned beef, rice, and a blend of melted cheddar and mozzarella, topped with salsa and baked until bubbly—perfect for busy weeknights or family-style dinners.
For the Filling
- 1 lb ground beef
- ½ cup chopped onion
- 2 cloves garlic minced
- 1 packet 1 oz taco seasoning
- ½ cup water
- 1 cup cooked rice
- 1 cup shredded cheddar cheese
- 1 cup shredded mozzarella cheese
For Assembly
- 4 large flour tortillas
- 1 cup salsa mild or spicy based on preference
- Optional: extra cheese for topping
For Serving
- ½ cup sour cream
- ¼ cup chopped fresh cilantro optional
Cook the Beef: Brown the ground beef in a skillet, then drain the fat.
Add Flavor: Sauté chopped onion and minced garlic until soft and fragrant.
Season the Mixture: Stir in taco seasoning and water; simmer until thickened.
Assemble the Burritos: Layer tortillas with rice, beef mixture, and cheeses.
