Cheesy Baked Broccoli Bites
Cheesy Baked Broccoli Bites golden, crispy mini bites with tender, cheesy broccoli inside. Perfect for snacks or appetizers.
- 2 cups finely chopped broccoli florets ≈ 1 medium head
- 2 large eggs
- 1 cup 100 g shredded cheddar cheese (or mozzarella)
- ½ cup 60 g breadcrumbs, plain or seasoned
- ¼ cup 25 g grated Parmesan cheese
- ½ teaspoon garlic powder
- ¼ teaspoon onion powder
- Salt and pepper to taste
- Optional: pinch of crushed red pepper flakes for a spicy kick
Preheat oven to 400°F (200°C) and prepare a baking sheet or mini muffin pan.
Steam or boil broccoli 3–4 minutes, drain, and chop finely.
Mix broccoli with eggs, cheddar, Parmesan, breadcrumbs, garlic and onion powder, salt, and pepper.
Shape into bite-sized balls or press into muffin pan; bake 18–22 minutes until golden and firm.
Cool slightly before serving.
