Cheesy Bacon Burger
A juicy, flavorful burger layered with crispy bacon, melty cheddar, fresh veggies, and a tangy special sauce, served on a buttery toasted brioche bun. Perfect for a family dinner, weekend treat, or casual entertaining.
For the Patties:
- 2 lbs 900 g ground beef (80/20 blend recommended)
- 1 tablespoon Worcestershire sauce
- 2 cloves garlic minced
- 1 teaspoon onion powder
- 1 teaspoon smoked paprika
- 1 teaspoon salt
- ½ teaspoon black pepper
For the Toppings:
- 8 slices thick-cut bacon
- 8 slices cheddar cheese or American cheese
- 4 brioche burger buns toasted
- 2 tablespoons butter for toasting buns
- 1 medium red onion sliced (optional)
- 1 large tomato sliced
- Lettuce leaves Romaine or Iceberg
- Pickles optional
For the Special Burger Sauce:
- ½ cup mayonnaise
- 2 tablespoons ketchup
- 1 tablespoon Dijon mustard
- 1 teaspoon pickle juice
- ½ teaspoon smoked paprika
Heat a skillet over medium heat and cook bacon 4–6 minutes per side until crispy. Drain on paper towels. For flat bacon, bake at 400°F (200°C) on a wire rack for 15–18 minutes.
In a bowl, combine ground beef, Worcestershire, garlic, onion powder, smoked paprika, salt, and pepper. Mix gently, divide into 4 patties about ¾ inch thick, and press a small indent in the center.
Cook patties on a grill or skillet over medium-high heat 3–4 minutes per side for medium. In the last minute, top with cheese and cover to melt.
Spread butter on brioche buns and toast cut-side down until golden and slightly crisp.
Spread sauce on both buns, layer lettuce, tomato, and pickles, add the cheesy patty, top with bacon and onion slices if desired, then cap with the top bun.
