- 2 cups graham cracker crumbs
- 6 tbsp melted butter
- 3 tbsp sugar
- 24 ounces cream cheese, softened
- 3/4 cup sugar
- 3 eggs
- 1 tsp vanilla
- 1/2 cup sour cream
- 2 apples, peeled and diced
- 1 tbsp butter
- 1 tsp cinnamon
- 2 tbsp brown sugar
- 1/3 cup caramel sauce
Preheat the oven to 325°F (165°C) and grease a 9-inch springform pan.
Mix the cracker crumbs, melted butter, and 3 tablespoons sugar; press into the pan and bake for 8 minutes.
Beat the cream cheese with 3/4 cup sugar until smooth.
Mix in the eggs one at a time, followed by vanilla and sour cream.
Pour the filling over the crust and bake for 50–60 minutes until the center gently jiggles.
Cool completely, then refrigerate for at least 4 hours.
Cook the apples with butter, cinnamon, and brown sugar until tender.
Spoon the cooled apples over the cheesecake and finish with caramel sauce.
