- 1 small onion diced
- 1 red bell pepper diced
- 2 cloves garlic minced
- 8 oz pasta such as penne or fettuccine
- 1 lb shrimp peeled and deveined
- 8 oz smoked sausage sliced
- 2 teaspoons Cajun seasoning adjust to taste
- 1 teaspoon smoked paprika
- 1 cup heavy cream or coconut cream
- ½ cup chicken or vegetable broth
- 2 tablespoons olive oil or butter
- Salt and pepper to taste
- Chopped parsley for garnish
Cook the pasta in salted boiling water until al dente, drain, and set aside.
Heat oil or butter in a skillet and brown the sausage for 4 to 5 minutes, then remove from the pan.
