Ingredients

  • 8 oz penne or fettuccine
  • 1 lb shrimp peeled and deveined
  • 6 oz smoked sausage sliced
  • 2 tbsp olive oil
  • 2 tbsp butter
  • 2 tsp Cajun seasoning
  • 1 tsp garlic powder
  • ½ tsp paprika
  • ½ tsp onion powder
  • ½ tsp black pepper
  • ½ cup heavy cream
  • ½ cup chicken broth
  • ½ cup grated Parmesan cheese
  • ¼ cup ranch dressing
  • ½ cup diced tomatoes optional
  • ¼ cup chopped green onions
  • 1 tbsp fresh parsley optional

Instructions

  • Bring a pot of salted water to a boil. Add pasta and cook until al dente. Drain and set aside.
  • Heat 1 tablespoon olive oil in a large skillet over medium-high. Add sausage slices and cook for 3–4 minutes until browned. Remove and set aside.
  • In the same skillet, add butter and remaining oil. Add shrimp along with Cajun seasoning, garlic powder, paprika, onion powder, and black pepper. Cook 2–3 minutes per side, until pink and fully cooked. Remove and set aside.
  • Lower heat to medium. Pour in heavy cream, chicken broth, and ranch dressing. Simmer for 2–3 minutes. Stir in Parmesan and optional diced tomatoes.
  • Add pasta, sausage, and shrimp back to the skillet. Toss to coat evenly in the sauce. Let it cook for 2 more minutes.
  • Turn off the heat. Sprinkle with chopped green onions and parsley. Serve hot straight from the skillet.
