Butterscotch Pie
The creamy, dreamy pie that hits the spot every time.
- 1 cup butterscotch chips
- 1 can sweetened condensed milk (14 oz)
- 1 cup heavy cream
- 3 egg yolks
- 2 tbsp butter
- 1 pre-baked pie crust
Melt butterscotch chips and butter together in a saucepan over low heat.
Stir in sweetened condensed milk and cook until smooth.
Beat egg yolks, then gradually add a bit of the hot mixture. Return to saucepan and cook until thickened.
Remove from heat and stir in heavy cream.
Pour into pre-baked pie crust.
Chill for at least 4 hours before serving. Enjoy!
