Preheat oven to 375°F (190°C) and grease a 9×13-inch baking dish.
Blend cottage cheese until smooth.
Whisk eggs and mix with blended cottage cheese, shredded cheese, Parmesan, garlic, onion powder, thyme, salt, and pepper.
Fold in broccoli, cauliflower, and optional diced turkey or chicken.
Pour into the prepared dish and spread evenly.
Bake 30–35 minutes until golden and set.
Cool a few minutes, then slice and serve warm.
