Broccoli & Cauliflower Cottage Cheese Bake – a cheesy, creamy veggie bake perfect for weeknight dinners or a comforting side.

Ingredients
  

  • 3 cups broccoli florets fresh or thawed
  • 3 cups cauliflower florets fresh or thawed
  • 1 cup low-fat cottage cheese blended smooth
  • 3 large eggs room temperature
  • 1 cup shredded cheddar or mozzarella
  • ¼ cup grated Parmesan
  • 1 tsp garlic powder
  • ½ tsp onion powder
  • ½ tsp dried thyme or Italian seasoning
  • ½ tsp salt
  • Black pepper to taste
  • Optional: ⅔ cup cooked diced turkey or chicken

Instructions
 

  • Preheat oven to 375°F (190°C) and grease a 9×13-inch baking dish.
  • Blend cottage cheese until smooth.
  • Whisk eggs and mix with blended cottage cheese, shredded cheese, Parmesan, garlic, onion powder, thyme, salt, and pepper.
  • Fold in broccoli, cauliflower, and optional diced turkey or chicken.
  • Pour into the prepared dish and spread evenly.
  • Bake 30–35 minutes until golden and set.
  • Cool a few minutes, then slice and serve warm.
