BLT Boiled Egg Sandwich

With hard-boiled eggs replacing the bread, this twist on a classic BLT is both yummy and healthy!

Ingredients
  

  • 6 eggs
  • 6 slices cooked bacon cut to the length of the egg
  • 1 small tomato sliced to the length of the egg
  • 1/4 cup lettuce cut to the length of the egg
  • 2 tbsp mayonnaise
  • Toothpicks
  • Salt and pepper to taste

Instructions
 

  • Hard-boil the eggs, peel, and slice them in half lengthwise.
  • On one half of each egg, layer a small amount of mayo, lettuce, bacon, tomato, more bacon, lettuce, and mayo, then top with the remaining egg half.
  • Secure everything with a toothpick. Sprinkle with salt and pepper to taste.
  • Repeat with the remaining eggs and ingredients. Serve immediately and enjoy!
