BLT Boiled Egg Sandwich
With hard-boiled eggs replacing the bread, this twist on a classic BLT is both yummy and healthy!
- 6 eggs
- 6 slices cooked bacon cut to the length of the egg
- 1 small tomato sliced to the length of the egg
- 1/4 cup lettuce cut to the length of the egg
- 2 tbsp mayonnaise
- Toothpicks
- Salt and pepper to taste
Hard-boil the eggs, peel, and slice them in half lengthwise.
On one half of each egg, layer a small amount of mayo, lettuce, bacon, tomato, more bacon, lettuce, and mayo, then top with the remaining egg half.
Secure everything with a toothpick. Sprinkle with salt and pepper to taste.
Repeat with the remaining eggs and ingredients. Serve immediately and enjoy!
