Banoffee Cookies

These cookies are a dreamy combination of flavors with a soft, chewy texture and a surprise caramel center.

Ingredients
  

  • 1 cup browned butter
  • 1 cup brown sugar
  • 1/2 cup white sugar
  • 2 large ripe bananas
  • 2 eggs
  • 1 tsp vanilla extract
  • 3 cups all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 cup chocolate chips
  • Caramel or toffee filling

Instructions
 

  • Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a bowl, mash the bananas. Add browned butter, brown sugar, and white sugar, and mix until smooth.
  • Add eggs and vanilla to the butter mixture and mix well. Stir in flour, baking soda, and salt until just combined. Fold in chocolate chips.
  • Chill the dough for 15-20 minutes, then scoop the dough and make a small indent for the caramel or toffee filling.
  • Place filled dough balls on the baking sheet and chill for at least 30 minutes or overnight.
  • Bake in the preheated oven for 12-15 minutes until the edges are golden brown and the centers are slightly soft.
  • Let cookies cool on the baking sheet for a few minutes before transferring to a wire rack. Serve and enjoy!
