Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
In a bowl, mash the bananas. Add browned butter, brown sugar, and white sugar, and mix until smooth.
Add eggs and vanilla to the butter mixture and mix well. Stir in flour, baking soda, and salt until just combined. Fold in chocolate chips.
Chill the dough for 15-20 minutes, then scoop the dough and make a small indent for the caramel or toffee filling.
Place filled dough balls on the baking sheet and chill for at least 30 minutes or overnight.
Bake in the preheated oven for 12-15 minutes until the edges are golden brown and the centers are slightly soft.
Let cookies cool on the baking sheet for a few minutes before transferring to a wire rack. Serve and enjoy!
