Banana Cinnamon Oat Breakfast Squares
Banana Cinnamon Breakfast Oat Squares are soft baked oat bars made with bananas, cottage cheese, oats, and warm cinnamon, creating a protein rich breakfast that can be prepared ahead for busy mornings.
- 1 cup cottage cheese
- 2 ripe bananas mashed
- 2 large eggs
- ⅓ cup maple syrup
- 2 cups rolled oats
- ½ cup vanilla protein powder
- 1 teaspoon cinnamon
- 1 teaspoon baking powder
- Pinch of salt
Preheat oven to 350°F and line an 8×8 inch pan with parchment paper.
Blend cottage cheese, mashed bananas, and eggs until smooth.
Mix with maple syrup, oats, protein powder, cinnamon, baking powder, and salt.
Pour batter into the pan and spread evenly.
Bake 25–30 minutes until lightly golden and set.
Cool completely, then lift out and cut into squares.
