Balsamic Baked Chicken Breast With Mozzarella Cheese
Tender chicken breasts baked in a garlic-infused balsamic glaze, topped with melty mozzarella and juicy roasted cherry tomatoes—an easy, healthy, and flavor-packed dinner.
- 4 boneless skinless chicken breasts
- 1 tablespoon olive oil
- 2 teaspoons Italian seasoning
- Salt and black pepper to taste
- 1 cup cherry tomatoes halved
- 1 cup shredded mozzarella cheese
- 2 tablespoons balsamic vinegar
- 1 tablespoon honey
- 2 cloves garlic minced
- Fresh basil leaves for garnish (optional)
Season chicken breasts with olive oil, Italian seasoning, salt, and pepper. Place them in a greased baking dish.
Whisk together balsamic vinegar, honey, and minced garlic in a small bowl.
Add cherry tomatoes around the chicken and pour the balsamic glaze over everything.
Bake at 400°F (200°C) for 20–25 minutes, until the chicken is almost cooked through (internal temp 160°F / 71°C).
Top with shredded mozzarella and bake for another 5–7 minutes, until the cheese is melted and chicken reaches 165°F (74°C).
Let rest for a few minutes, garnish with fresh basil, and serve hot with your favorite sides.
