Balsamic Baked Chicken Breast With Mozzarella Cheese

Tender chicken breasts baked in a garlic-infused balsamic glaze, topped with melty mozzarella and juicy roasted cherry tomatoes—an easy, healthy, and flavor-packed dinner.

Ingredients
  

  • 4 boneless skinless chicken breasts
  • 1 tablespoon olive oil
  • 2 teaspoons Italian seasoning
  • Salt and black pepper to taste
  • 1 cup cherry tomatoes halved
  • 1 cup shredded mozzarella cheese
  • 2 tablespoons balsamic vinegar
  • 1 tablespoon honey
  • 2 cloves garlic minced
  • Fresh basil leaves for garnish (optional)

Instructions
 

  • Season chicken breasts with olive oil, Italian seasoning, salt, and pepper. Place them in a greased baking dish.
  • Whisk together balsamic vinegar, honey, and minced garlic in a small bowl.
  • Add cherry tomatoes around the chicken and pour the balsamic glaze over everything.
  • Bake at 400°F (200°C) for 20–25 minutes, until the chicken is almost cooked through (internal temp 160°F / 71°C).
  • Top with shredded mozzarella and bake for another 5–7 minutes, until the cheese is melted and chicken reaches 165°F (74°C).
  • Let rest for a few minutes, garnish with fresh basil, and serve hot with your favorite sides.
