Baked Potato Chicken & Broccoli Casserole

This Baked Potato Chicken & Broccoli Casserole is a creamy, cheesy comfort meal with tender chicken, soft potatoes, and fresh broccoli—simple, hearty, and perfect for family dinners.

Ingredients
  

  • 3 cups cooked chicken shredded or diced
  • 3 cups potatoes small-diced
  • 2 cups broccoli florets
  • 1 small onion diced
  • 3 cloves garlic minced
  • cups shredded cheddar cheese
  • 1 cup sour cream
  • 1 cup heavy cream or milk
  • 2 tbsp butter
  • 1 tsp paprika
  • 1 tsp garlic powder
  • Salt and pepper to taste
  • Fresh chives or parsley for garnish

Instructions
 

  • Preheat oven to 375°F (190°C) and grease a baking dish.
  • Boil diced potatoes in salted water for 8–10 minutes, drain, and set aside.
  • Sauté onion and garlic in butter for 2–3 minutes until fragrant.
  • Mix chicken, potatoes, broccoli, onions, sour cream, cream or milk, spices, and 1 cup cheese.
  • Spread mixture in the dish and top with remaining ½ cup cheese.
  • Bake 25–30 minutes until bubbly and golden.
  • Rest briefly, garnish with chives or parsley, and serve warm.
