Baked Potato Chicken & Broccoli Casserole
This Baked Potato Chicken & Broccoli Casserole is a creamy, cheesy comfort meal with tender chicken, soft potatoes, and fresh broccoli—simple, hearty, and perfect for family dinners.
- 3 cups cooked chicken shredded or diced
- 3 cups potatoes small-diced
- 2 cups broccoli florets
- 1 small onion diced
- 3 cloves garlic minced
- 1½ cups shredded cheddar cheese
- 1 cup sour cream
- 1 cup heavy cream or milk
- 2 tbsp butter
- 1 tsp paprika
- 1 tsp garlic powder
- Salt and pepper to taste
- Fresh chives or parsley for garnish
Preheat oven to 375°F (190°C) and grease a baking dish.
Boil diced potatoes in salted water for 8–10 minutes, drain, and set aside.
Sauté onion and garlic in butter for 2–3 minutes until fragrant.
Mix chicken, potatoes, broccoli, onions, sour cream, cream or milk, spices, and 1 cup cheese.
Spread mixture in the dish and top with remaining ½ cup cheese.
Bake 25–30 minutes until bubbly and golden.
Rest briefly, garnish with chives or parsley, and serve warm.
