Baked Cottage Cheese Eggs
Cottage Cheese Eggs are soft scrambled eggs blended with creamy cottage cheese, cheddar, and spinach for a simple protein packed breakfast.
- 1 cup cottage cheese
- 4 large eggs
- ½ cup shredded cheddar cheese
- ¼ cup chopped spinach
- ¼ teaspoon garlic powder
- ¼ teaspoon salt
- ¼ teaspoon black pepper
Whisk eggs, cottage cheese, salt, black pepper, and garlic powder in a bowl until well combined.
Heat a nonstick skillet over medium-low heat and lightly coat with oil or cooking spray.
Pour the egg mixture into the warm skillet.
Gently scrape the eggs toward the center with a spatula as they begin to set, forming soft folds.
Add shredded cheddar and chopped spinach, cooking about 1½–2 minutes until just set and creamy.
Remove from heat and serve warm while soft and fluffy.
