Baked Cottage Cheese Eggs

Cottage Cheese Eggs are soft scrambled eggs blended with creamy cottage cheese, cheddar, and spinach for a simple protein packed breakfast.

Ingredients
  

  • 1 cup cottage cheese
  • 4 large eggs
  • ½ cup shredded cheddar cheese
  • ¼ cup chopped spinach
  • ¼ teaspoon garlic powder
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper

Instructions
 

  • Whisk eggs, cottage cheese, salt, black pepper, and garlic powder in a bowl until well combined.
  • Heat a nonstick skillet over medium-low heat and lightly coat with oil or cooking spray.
  • Pour the egg mixture into the warm skillet.
  • Gently scrape the eggs toward the center with a spatula as they begin to set, forming soft folds.
  • Add shredded cheddar and chopped spinach, cooking about 1½–2 minutes until just set and creamy.
  • Remove from heat and serve warm while soft and fluffy.
