Baked Broccoli Cheese Balls

These are a breeze to make, packed with flavor, and loaded with nutrients like vitamin C and potassium.

Ingredients
  

  • 500 g broccoli chopped into florets
  • 1 cup gluten-free breadcrumbs
  • 2 eggs + 1 egg white
  • 3 spring onions chopped
  • 1 cup cheese shredded
  • Salt and pepper to taste

Instructions
 

  • Preheat oven to 200°C (390°F).
  • Blanch broccoli florets for 1 minute, then chop finely.
  • Combine breadcrumbs, eggs, spring onions, cheese, salt, and pepper in a bowl.
  • Add chopped broccoli to the mixture and mix well.
  • Roll the mixture into small balls and place them on a parchment-lined baking tray.
  • Bake for 10 minutes, rotate the balls, and bake for another 10 minutes until golden brown. Serve and enjoy!
